Applesauce pancakes

4 eggs

2/3 cup unsweetened applesauce

1 teaspoon vanilla 

1 2/3 cup flour 

1 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon salt

1/3 cup water

1 teaspoon cooking spray

1 cup thinly sliced apple

Whisk together eggs, applesauce and vanilla in a large bowl. In another bowl stir together flour, baking soda, cinnamon and salt. Add flour mixture to egg mixture and stir until just combined. Stir in water until batter is desired thickness. Let batter rest 15 minutes.

Spray oil on a griddle over medium heat. Working in batches, add 2 tablespoons portions of batter to griddle. Top with apple slices. Cook until bubbles form and edges are dry, 2 to 3 minutes. Flip and cook until bottoms are browned. Repeat with remaining batter. Top with apple slices. Serves 6

Baked Potato Slices

  Scrub medium sized baking potatoes, one for each person. Do not peel. Cut in 1/4 slices. Combine 1/2 cup melted butter 1 package onion soup mix and 1 teaspoon salt. Pour 1/2 cup water into a casserole.

  Arrange a layer of potato slices in casserole; spread with onion mixture. Repeat, alternating layers of potatoes and mixture. Cover and bake 45 to 60 minutes or until tender.

Pork and Apple Meatballs

Combine:

1 pound lean ground pork

1 cup Panko bread crumbs

1 cup finely chopped apples

2 finely chopped green onions,

1 tablespoon Worcestershire sauce

1 beaten egg

  Heat oven to 375 degrees. Cover rimmed baking sheet with foil; spray with cooking spray. Mix ingredients until just blended. Shape into 24 meatballs using about 1 tablespoon for each, place on baking sheet. Bake 20 minutes or until done. About 5 minutes before meatballs are done, combine 3/4 cup sesame dressing and 2 tablespoons Dijon mustard; bring to a boil in large skillet, stirring frequently. Add meatballs to dressing mixture; cook 3 minutes, or until sauce is slightly thickened, stirring occasionally to evenly coat all sides of meatballs with dressing mixture.
