Sweet and Sour Chicken

1/2  to 3/4 cup apricot jam

1/2 small bottle Russian dressing

1 package dry onion soup

8 chicken breasts or whole chicken

Mix together jam, dressing and onion soup. Put over chicken. Bake in 325 degree oven for 2 hours Less time if chicken is cut into small pieces. Use up sauce by basting.

Chow Mein Hot Dish

2 pounds hamburger

1 large onion

2 cups chopped celery

1 can bean sprouts

1 medium-size can mushrooms

1 can cream of chicken soup

1 can cream of mushroom soup

1 small package chow mein noodles

  Brown meat, onion and cook until done. Add bean sprouts, mushrooms and soups, mix with chow mein noodles. Put in large casserole and bake at 350 degrees for one hour. Serves 8 to 10 people.

Rhubarb Cake

1 1/2 cups brown sugar 1 teaspoon cinnamon

1/2 cup butter or margarine 1 cup buttermilk

1 egg 1 1/2 cups raw rhubarb, cut up fine

2 cups flour 1 teaspoon vanilla

1 teaspoon soda

  Cream brown sugar and margarine; add egg and beat. Mix together flour, cinnamon and soda. Add dry ingredient mixture alternately with buttermilk to creamed mixture. Stir in rhubarb, add vanilla. Sprinkle with 1/2 cup white sugar, 1 teaspoon cinnamon and 1/2 cup nuts. Bake at 350 degrees for 45 minutes in a 9 x 13 inch greased pan. No frosting needed.
